Grown Up Grilled Cheese…

In my quest for a grilled cheese that is not meant for a toddler (and will go well with wine)(of course)…  I decided to start “The Grilled Cheese Project”. Here I will be exploring all matter of “grown up” grilled cheeses.  I will provide the recipes and reviews as well…    Here is to finding the perfect grilled cheese for the more discriminating palate (I am raising my glass of wine)(I know you can’t see it)(but, I am).

First up…

The Caprese Grilled Cheese

Ingredients

1 Medium Tomato, sliced

3 or 4 Sweet Basil Leaves

6 Slices Fresh Mozzerella

4 Slices Sourdough Bread (Italian or what ever sort of bread you like)

Butter or Margarine

Pre-heat your skillet (or griddle)(I used an electric griddle heated to 400). Butter one side of your bread slices.  Once the griddle is hot, place one slice of bread, butter side down on the griddle.  Place cheese, basil and tomato on top and cover with other slice of bread.  Do the same for the other slices.  After about 3 minutes, flip the sandwich over and give it 3 more minutes.  Before serving I took a plate (you could use a frying pan too) and laid it on top of the sandwich and just gave it a gentle press so it would stay together.

That’s it.  I served this with a cold Lindeman’s Bin 50 Shiraz (we have discovered that this red cools nicely and is great with summer meals).  We LOVE Caprese Salad.  So, of course…  we loved this.  It was wonderful!
